As we approach holiday season, we also approach the dreaded “tight pants” season. Breakfast is one of my favorite meals of the day anyways, so when you throw in holiday baking I’m one happy girl! Last year while visiting my grandmother we were looking for a “healthier” pumpkin recipe, half expecting to still make the fattening version. Now most of the time you sacrifice taste attempting to be healthy, but these are actually amazing!! I wouldn’t call myself a chef, but testing a recipe with Jabby, my grandmother, seemed like a decent start! These were a piece of cake!
So here’s the deal, ingredients include : oats, banana, pumpkin, almond milk, honey, a few spices, and dark chocolate chips on top (optional – but I would say must have). No flour or sugar needed which I loved! The chocolate chips make the muffins – should have known! Two or three go a long way, so don’t feel too guilty! This is hands down one of my favorite Pinterest recipes ever! I’ve been eating them for breakfast, lunch, snack or dessert. It is pumpkin season right?? They keep me full without that blah feeling we often get from baked goods, no matter how heavenly they taste! I hope you’ll enjoy these as much as we have!!
2 cups old-fashioned rolled oats
1/4 tsp sea salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 ripe banana
1 15 oz. can pumpkin
1/2 cup almond milk
1/4 cup honey
Handful of dark chocolate chips to sprinkle on top!
